Peanut Butter Cookies

This recipe was an absolute staple around the holidays for our family. Take care to not over-flatten, or you’ll wind up with crispy critters instead of tasty treats.

Peanut Butter Cookies
These cookies are sweet and soft, and are absolutely addictive. Serve them warm with a glass of ice-cold milk, and watch them disappear.

Instructions
  1. Preheat oven to 375 degrees.
  2. Cream the butter and sugars together until fluffy.
  3. Add the egg, hot water, and peanut butter, blend well.
  4. Sift soda, flour and salt together, and gradually add the dry ingredients to the mixture.
  5. Chill for 15 minutes, then form into 1 to 1 1/2-inch balls on a cookie sheet. Press a fork into granulated sugar, then flatten cookies to about 3/8" thickness by pressing twice in a criss-cross pattern.
  6. Bake for 10-12 minutes at 375 degrees. Let cool on the sheet for five minutes, then serve cookies warm with a glass of milk. Yields 3 dozen cookies.
